The question of which guns a prepper should have is going to depend on their particular circumstances. If you are in a place you want to be when the SHTF, you probably already have several guns and ammo for them. You don't have to carry every gun you have, at all times. Guns are tools, and people have different tools for different tasks. If you are in a city (really, still?) then having a pistol which you can conceal is of particular importance, but realize that pistols require considerable practice to be reasonably effective. A 12 gauge pump shotgun would be good for home defense, loaded with No. 4 buckshot.

On the homestead, you would have more, different uses for a gun. A .22 such as the Ruger 10-22 for varmints and small game. A semi-auto rifle in .223 is essential, especially if there is a lady in the house. The recoil is minimal. Another option is a semi-auto in .308, which has longer range and more killing power, but it kicks more, and weighs more. It can easily be used for big game hunting. You can practice with military surplus full-metal jacket ammo, but make sure you have on hand a supply of hunting ammo. Alternately, a scoped, bolt-action big game rifle can be used, but if there are hordes of zombies, the semi-auto might be better. The 12 gauge shotgun is a utility weapon for the homestead.
