This is a much easier faster version of classic stuffed peppers. Unstuffed Peppers are a scrumptious Pepper, Rice, cheese and Hamburger Casserole that you can cook on the stove top without heating the house up. It is a simple, one pot dish that is perfect for any weeknight dinner and you can have on the table in less than 30 minutes. The variations are virtually endless. It's easy, affordable, and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store.
Unlike the classic version of stuffed peppers you can use less than perfect peppers or even frozen chopped peppers and it doesn’t take hours to make. It the winter, I still put them in a 350 degree oven until the cheese is brown.

Ingredients:
2 Bell Peppers or Frozen Peppers
1 pound Ground Beef or Kidney Beans or Black Beans
1 Good size chopped onion
1 cup uncooked Long Grain Rice & 2 cups Water = 4 cups Cooked Rice
1 can Tomato Soup or other Tomatoes
2 Cups Shredded (Cheddar) Cheese
Salt & pepper to taste
Optional hot peppers or other spices
I always top mine with sour cream
