I did get a chuckle at the article. While you might get lucky at merely pulling up a cattail to get the root, more than likely, you'll need some shovel device. Kind of like a sunchoke, crunchy and good. In my youth, we used to cut off about 4' of the cattail and soak the brown part in kerosene. Would make a lovely torch. I have never tried but, you can grind the brown part into a flour.

I would also recommend the root of the Queen Anne's Lace plant. It's a member of the carrot family and is about everywhere and abundant. Same thing as with cattails, a trowel or shovel is best to get to the edible root. Articles exist stating the entire plant is edible. Never tried anything but the root. Crunchy like a carrot and they grow all over.
