English sour cabbage means sauerkraut in German.

So American soldiers called Germans krauts.

Perhaps because one of the best German dishes still is calf lover leg with sour cabbage & potatoes. Of course with beer. For american soldiers that was food for the poor.

I had opportunity to taste this dish in Eastern Berlin in 1987 & 1989, while there on business trips.
